Healthy Takes on Comfort Food; Ground Turkey & Quinoa Meatloaf

I love me some meatloaf (the food, not the singer). Being that traditional meatloaf is a comfort food it isn’t really the healthiest dish. In search of a healthier alternative I came across a recipe for ground turkey & quinoa meatloaf. I’ve made it several times and it is always a big hit with my family. Even though it doesn’t include the traditional ground beef and breadcrumbs, it still offers plenty of savory spice that mimics the traditional dish in all its glory. So keep those fitness goals in check while indulging in this delicious dish.

Ground Turkey & Quinoa Meatloaf
Prep Time: 30 Minutes
Cook Time: 50 Minutes
Servings: 5

INGREDIENTS:
1 teaspoon olive oil
1 small onion chopped
1 large clove garlic crushed
1 (20 ounce) package ground turkey
1 tablespoon tomato paste
1 tablespoon hot sauce
2 tablespoons Worcestershire sauce
1 egg
1 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon water

1/4 cup quinoa
1/2 cup water

DIRECTIONS:
Preheat an oven to 350 degrees

In a small saucepan combine your quinoa & water and bring to a boil. Then reduce heat and cover allowing to simmer until the water is absorbed. Set aside and allow to cool as you prep your other ingredients.

In a bowl combine turkey, egg, olive oil, garlic, tomato paste, hot sauce, 2 tablespoons Worcestershire, salt, pepper, and quinoa – mix thoroughly. Shape into a loaf and lay it on a foil lined baking sheet.

In a small bowl combine the brown sugar, 2 teaspoons Worcestershire, and 1 teaspoon water – use this mixture to glaze the top of your meatloaf.

Put your meatloaf in the oven for approximately 50 minutes (if you aren’t sure if it is done you can always cut it in the center to see if it is still pink).

Once your pull it out of the oven allow it to cool for 10 minutes before slicing it – then enjoy!
