Bourbon Glazed Salmon aka the reason my husband married me

If I need to throw together a dinner that is sure to please every type of taste bud, I go to my trusty bourbon glazed salmon (minus the bourbon sometimes because it can be a hassle sometimes). This dish is so good, my husband claims it is the reason he married me (seriously – are you writing this down yet?).

The sides I recommend for this are asparagus, carrots and potatoes or really whatever you have. I typically wash all of my veggies, throw them in a glass dish with some olive oil, pepper and salt and put them in the oven to roast at 425 degrees for thirty to forty minutes (just keep your eyes on it).

For the salmon, simply pick out a few fillets, frozen or fresh (I like to buy a big bag of frozen at Costco and that lasts me a few months).  In a bowl combine your salmon fillets with;
-teaspoon lemon juice
-1 teaspoon ginger
-1 cup brown sugar
-1 cup soy sauce
-2 tablespoon bourbon (optional)

Marinate your salmon in a bowl for approximately 30 minutes. Great news – if you are running short on time you can skip marinating because the whole mixture is going straight into the glass dish, with the salmon into the oven for 20-30 minutes (joining your veggies at the 425 degrees).

I like to serve this dish with a side of white rice and a drizzle of sriracha. The glaze is always amazing and you can add a bit of wasabi  to the marinade to give your salmon a bit of a bite.
