With the new year, comes new resolutions. The desire to be healthier always seems to creep onto my list. I’m a firm believer that life is too short to cut out all delicious foods, but I love challenging myself to find healthier methods of making my favorite comfort dishes.
The recipe I shared below for my Jumpin’ Jambalaya will impress the heck out of your whole family while maintaining your health goals. For those of us who are on a low carb or paleo diet you can simply skip the rice.
Jumpin’ Jambalaya
Prep Time: 20 Minutes
Cook Time: 25 Minutes
Servings: 4
INGREDIENTS:
1 tablespoon olive oil
1 tablespoon butter
1 large onion diced
4 cloves garlic crushed
3 green bell peppers, seeded and diced
1 teaspoon sriracha or hot sauce
2 tablespoons Cajun or Bay seasoning
1 cup chicken broth
1 (14 ounce) can crushed tomatoes
3 andouille sausage cut into circles
1 pound chicken breast cut into cubes
1 pound shrimp, deveined & peeled
In a large saucepan heat your olive oil, butter, onions & garlic over medium heat . Add your chicken, andouille sausage, shrimp, and sriracha. Cook approximately 10 minutes or until chicken is no longer pink. Mix in crushed tomatoes, green bell peppers, Cajun seasoning, and chicken broth. Bring mixture to a boil, then reduce heat and simmer uncovered until it has thickened (approximately 15 minutes). Serve as a stand alone dish or add rice for a traditional Jambalaya & Enjoy!
